Coke Pork and Red Smashed Potatoes


Didn't I say I was going to bombard you with recipes this week?  This is super quick and very simple for the busy night. A sweet pork dish and some lumpy yet creamy potatoes make this meal perfect!


Coke Pork
4 boneless pork chops
1 Cup Coke-a-cola
1/2 Cup Ketchup
1 Tablespoon brown sugar
1/2 teaspoon salt and pepper

Place coke,ketchup,sugar,salt and pepper into pan and mix well.  Place chops into mixture,cover and put on med for 20 minutes or until done.

Red Smashed Potatoes
12 red potatoes
1/2 cup Sour cream
1/2 stick room temp butter
2 Tablespoons dry parsley
salt and pepper to taste

Place red potatoes into boiling pot of water until done.
Strain and put into heat proof bowl.  Put in rest of ingredients into potatoes and smash until they are done to you.  I like mine a little chunky. 



She picks out all the red skins little stinker!

Cookie in a mug



What a perfect little snack to hold that craving off and even easier if you want to make one each for your kids and you don't feel like turning on your oven on a hot summer day
1 tbsp. butter, melted
1 tbsp. white sugar
1 tbsp. brown sugar
3 drops of vanilla
pinch of salt
1 egg yolk
1/4 c. flour
2 tbsp. chocolate chips 

In a bowl, ix together the butter, sugars, vanilla, and egg yolk. 
Add in the flour and salt. 
Mix until combined.
Add in the chocolate chips. 
Put the dough into a small microwaveable bowl, ramekin, or coffee cup.
Microwave for 40-60 seconds or until the cookie looks done. 
Best served warm… Enjoy!

Banana Cartoffee Cupcakes


Welcome back to me!  It has been a very hectic week where I didn't get to sit down and be on the computer.  For fathers day we made these cupcakes.  My hubby loves my banana cupcakes, caramel and toffee so why not!  The recipe I got this from is not my favorite.  I actually did these over my own way because well the recipes banana cake stuck to the wrapper, the frosting was way to thick and hard to pipe.  I will provide the link to the original recipe but here is my recipe.

Banana Cupcakes
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 1/4 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 bag crushed heath bars

  1. In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full.
  2. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean.


Caramel Sauce 
*This recipe makes a lot so put away an extra and serve over brownies or ice cream!*

1/2 cup of brown sugar
1/2 teaspoon of salt
3 Tablespoons of water
1 14-ounce can of Sweetened Condensed Milk
1/2 cup (that's 1 stick) of unsalted butter, cut into 12 pieces

In a medium size, heavy-bottomed saucepan, combine the brown sugar, salt and water.
Stir over medium heat until the sugar dissolves. Once the sugar has dissolved, stop stirring. Increase the heat and cook until mixture turns deep amber. Every now and then, use the handle of the pan to give it a gentle swirl (this will keep the toffee from burning).
Lower the heat to medium and add the can of sweet milk and cut-up butter. Stir and cook for about 5 minutes, until the mixture begins to thicken slightly.
Remove from the heat

Caramel Buttercream
16 tbsp. unsalted butter, at room temperature
1 lb. confectioners’ sugar
1½ tsp. vanilla extract
1/3 cup caramel sauce
Pinch of coarse salt
2 tbsp. heavy cream

add the butter to the bowl of an electric mixer.  Beat on medium-high speed 1 minute until smooth.  Blend in the confectioners’ sugar until smooth, 1-2 minutes.  Mix in the vanilla, caramel sauce and salt until incorporated.  (Note: the caramel sauce should be just warm enough that it is workable, but not warm enough to melt the butter in the frosting.)  Add the heavy cream and whip on high speed until light and fluffy, about 3-4 minutes.

**When cupcake cakes are done.  Poke cupcake with tooth pick and take 1 teaspoon of caramel sauce and pour it on top of the cupcake.  Frost your cupcake and sprinkle the crushed candy on top**

Egg whites in a mug



Another week of Food in a mug June and today it Egg Whites.  Now usually when school is in session the morning are the worst.  Wake up get the kids ready, get the baby, feed them, feed the dogs let them outside and start cleaning.  In the end I have no me time so I never get to eat anything healthy.  I have seen people make eggs in a mug but why not egg whites!

1/2 cup of egg whites
1 slice of tomatoes diced
2 sliced mushrooms diced
1/4 teaspoon diced garlic
pinch of shredded cheddar cheese

Put into mug,mix and put in microwave for 1 min and 30 secs after that until it is no longer runny.

Tip Me Tuesday #1 Linky Party

Today I will be writing about some tips to better cake baking
  1. All ingredients should be room temperature.  Around 60 mins out of fridge  
  2. To create a replacement for buttermilk add 1 Teaspoon of vinegar to every 1 cup of milk
  3. Unless the recipe says different use unsalted butter for your batter
  4. When creaming butter and sugar get the mixture to a pale yellow it will take around 5 minutes 
  5. Always Start and end with dry ingredients when alternating
  6. Beat egg yolks before adding to batter
  7. Rotate cakes after 20 minutes of baking
  8. When making a chocolate cake instead of coating your pan with butter and flour coat it with butter and cocoa powder

There are probably tons more but those are my main ones!

Bacon Ranch Cheese Ball


Start of the party week!  This was a hit it was seriously the first thing gone I should have doubled it!  I shaped it into a carrot because well my daughters had a spring bunny party! I will be making it again for another occasion but will be making it into a ball or a heart as my sister in law requested haha. 
But really this was creamy and the perfect taste of everything!  It is a must make for any event!

1 (8 ounce) package cream cheese at room temp

1/2  package hidden valley ranch dressing mix (dry) 

1 cup cheddar cheese 

5-6 pieces of crumbled bacon

1 tbsp. chopped green onion 

1 tbsp. Sour Cream 

Mix cream cheese,ranch mix,bacon, onions and sour cream together and until fully mixed.  Shape into any shape or ball you want and pat the cheddar cheese on the cheese ball

A special day: Spring Bunny Birthday

So I don't do many personal post on here but when it comes to birthday I feel like I should.  Today was a special day and that is that my last baby, my baby princess turned 1!!  She shared a birthday party with her sister since her birthday was last Sat.


We had a Spring Bunny Birthday Theme which was really fun to plan.
